Amilosaharaza (EC 2.4.1.4, saharoza-glukan glukoziltransferaza, saharoza-1,4-alfa-glukan glukoziltransferaza, saharoza:1,4-alfa-D-glukan 4-alfa-D-glukoziltransferaza) je enzim sa sistematskim imenom saharoza:(1->4)-alfa-D-glukan 4-alfa-D-glukoziltransferaza.[1][2][3] Ovaj enzim katalizuje sledeću hemijsku reakciju
